Every batch is mixed, sealed, kept dark and left alone for twenty eight days, then filtered and rested in its bottle for a further week.
We smell each batch at day one, day seven and day twenty eight and write all three on the card. The change over that month is not a matter of opinion. The alcohol binds, the loudest material stops shouting, and the base finally appears.
Twice we have nearly discarded a formula at day one that became the best thing we made that quarter. Those two cards are pinned above the bench as a reminder.
This is the part of the studio that customers find hardest, and we are not going to move on it. If you need something this week, we are the wrong studio, and we will tell you that in the first message rather than the fourth.
