We run a cold room and a freezer, which on an island is a service rather than a shelf.
Frozen goods stay here until you collect them or until the round goes out, and they travel in a cool box for the five minutes they are outside. In a power cut the generator takes the cold room first, which is a decision we made after losing a freezer full of stock in 2019 and one we have never regretted.
We will hold a frozen order at the counter for two days. After that it goes back into stock, because a bag of chicken standing in a shop waiting for somebody is a bag of chicken nobody should eat.
