Four guesthouses under one owner, on three islands, all buying produce in Male and all receiving it whenever a boat happened to come.
The food was not the problem. The timing was. Produce arrived at the atoll early in the morning and reached the kitchens in the afternoon, having spent five or six hours on a quay. Leafy vegetables were finished, tomatoes were soft, and the kitchens had learned to order more to cover the waste, which made the bill worse as well.
We built one circuit leaving Maamigili at six, calling in an order fixed by which kitchen serves breakfast earliest. The Male cargo is received into our chill room the evening before rather than standing overnight, and everything travels in full insulated boxes with a logger.
The waste on produce across the four properties fell by a figure the owner puts at about a third. The number we measure is simpler: the last drop is done by twenty past seven.
