We keep the dates visible. Every carton we load shows its expiry on the outside, and we will not send a shop something with less than four months on it without saying so and pricing it accordingly. Short dated stock on an island is stock that gets thrown away, because there is nobody to sell it on to.
Ask for the fast moving list if you are starting out. It is thirty lines and it is about sixty per cent of what a small island shop actually sells.
