A message at half past eleven asking whether we could feed eleven people at a jetty at one, from somebody who had clearly asked several other places first.
Eleven portions is the top end of what we can put into a single hour without pushing everybody else back, so we took it into the one o'clock hour and closed that hour to other orders. Fried rice and fried eggs, packed in the large boxes, with a bag of water bottles because nobody ever orders water and everybody wants it.
The rider met them at the jetty and rang from the gate, which is the only way this works at that hour.
They have ordered four times since, always the same thing, always late. The useful lesson was that closing an hour deliberately is better than squeezing an order into it and being late for six other people.
