A twelve room guesthouse with a breakfast that runs from seven, and changeover days where the kitchen empties faster than anybody planned for.
They order the evening before, into the last window of the night, so that everything is in the kitchen before the morning shift arrives. Eggs, bread, butter, jam, fruit, milk, tea, coffee and the paper things.
We hold their list and they change three or four lines each time. The only rule we asked for was that the order is in before eight in the evening, because a six in the morning delivery from a shop that closes at eleven is not a thing we can honestly promise.
