Forty staff, a small kitchen, and a month where everything about the working day moves.
The order was the same list of about thirty items, adjusted by one message each afternoon. Dates, juice, milk, sugar, tea, bread, fruit and the cleaning things nobody thinks about until they run out. It went out in the four o'clock window every day so that it was in the kitchen before anybody needed it.
The useful part for them was the paperwork rather than the groceries. One invoice at the end of the month with GST on it and a reference for every delivery, instead of thirty receipts from a shop collected in somebody's pocket.
They have kept the arrangement outside Ramadan at two deliveries a week.
